Thai Curry Salmon

Ingredients:

  • 2-3 salmon filets

  • 1 can coconut milk

  • 2 Tbsp Thai curry paste

  • 3-4 cloves garlic

  • 2 tsp soy sauce

  • 1 tsp fish sauce

  • 1 Tbsp honey

  • 2 tsp chicken bullion

  • 2 cups cooked rice

  • fresh asparagus


Directions:

  • Season salmon with salt, pepper, and garlic to taste.

  • Mix the remaining ingredients to make the sauce.

  • In a preheated pan with a tablespoon of olive oil, cook the salmon for 3 minutes on each side. Remove to a plate. It will continue cooking in the sauce.

  • Add 2 cups of cooked rice and fresh asparagus to the pan.

  • Pour the Thai curry sauce over the rice and veggies, reserving ½ cup to pour over the salmon.

  • Layer with the salmon and with the reserved sauce.

  • Cover with a lid and cook on medium-low heat for about five minutes to let everything come together.
