Thai Curry Salmon
Ingredients:
2-3 salmon filets
1 can coconut milk
2 Tbsp Thai curry paste
3-4 cloves garlic
2 tsp soy sauce
1 tsp fish sauce
1 Tbsp honey
2 tsp chicken bullion
2 cups cooked rice
fresh asparagus
Directions:
Season salmon with salt, pepper, and garlic to taste.
Mix the remaining ingredients to make the sauce.
In a preheated pan with a tablespoon of olive oil, cook the salmon for 3 minutes on each side. Remove to a plate. It will continue cooking in the sauce.
Add 2 cups of cooked rice and fresh asparagus to the pan.
Pour the Thai curry sauce over the rice and veggies, reserving ½ cup to pour over the salmon.
Layer with the salmon and with the reserved sauce.
Cover with a lid and cook on medium-low heat for about five minutes to let everything come together.
