Crispy Goat Cheese Salad
Ingredients:
For Salad:
6-8oz arugula
1 apple, thinly sliced
½ cup pecans, toasted
4 oz goat cheese
honey, for drizzling
ForDressing:
¼ cup olive oil
¼ cup fresh lemon juice
¼ cup dijon mustard
¼ cup honey
½ tsp salt
¼ tsp black pepper
Directions:
Toast pecans for 3-5 minutes, until fragrant.
Prepare the goat cheese:
Slice goat cheese into 1" slices.
Place on parchment paper and brush generously with honey.
Air Fry at 375°F for 5-7 minutes until warm and softened, lightly golden on top. Or, broil on high for 2-4 minutes.
Whisk together all ingredients to make dressing.
Add arugula to a large bowl and lightly dress it.
Top with sliced apples, toasted pecans, and crispy honey goat cheese.
Also great with: dried cherries, prosciutto, shaved parmesan, roasted beets, or substitute hot honey instead of regular honey.
