Crispy Goat Cheese Salad

Ingredients:

For Salad:

  • 6-8oz arugula

  • 1 apple, thinly sliced

  • ½ cup pecans, toasted

  • 4 oz goat cheese

  • honey, for drizzling

ForDressing:

  • ¼ cup olive oil

  • ¼ cup fresh lemon juice

  • ¼ cup dijon mustard

  • ¼ cup honey

  • ½ tsp salt

  • ¼ tsp black pepper


Directions:

Toast pecans for 3-5 minutes, until fragrant.

Prepare the goat cheese:

  • Slice goat cheese into 1" slices.

  • Place on parchment paper and brush generously with honey.

  • Air Fry at 375°F for 5-7 minutes until warm and softened, lightly golden on top. Or, broil on high for 2-4 minutes.

  • Whisk together all ingredients to make dressing.

  • Add arugula to a large bowl and lightly dress it.

  • Top with sliced apples, toasted pecans, and crispy honey goat cheese.

Also great with: dried cherries, prosciutto, shaved parmesan, roasted beets, or substitute hot honey instead of regular honey.
