Lemony Orzo
Ingredients
1 Tbsp salted butter
1 ½ cups orzo pasta
2 cloves garlic, minced
2 ½ cups broth, chicken or vegetable
½ t salt
¼ t pepper
⅓ c heavy cream
2 Tbsp grate Parmesan
Juice of 1 lemon
Directions
Melt the butter in a large skillet over medium-high heat. Add the orzo and garlic, toasting for 1-2 minutes.
Stir in the broth, salt and pepper.
Bring to a boil, then reduce the heat to medium-low, cover and simmer. Cook for about 10 minutes, until most of the liquid is absorbed and the pasta is tender, stirring often. Add more broth as needed.
Stir in the cream and parmesan. Add the lemon juice gradually until flavored to your preference.
