Black Bean Sweet Potato Burger
Ingredients:
1 medium sweet potato, cooked
1 (15oz) can black beans, drained and rinsed
½ cup old-fashioned rolled oats
1 t ground cumin
1t paprika
½ t garlic powder
1 t salt
2 T olive oil
Directions:
In a large bowl, mash the sweet potato until smooth. Add the black beans and continue to mash, leaving a few beans whole. Add the oats, cumin, paprika, garlic powder, and salt and mix well to combine.
Using a ½ cup measuring cup, scoop the bean burger mixture and form it into 6 patties, each about ½ inch thick. Set the formed patties aside.
In a large skillet or griddle, heat the oil over medium-high heat. Carefully add the patties and cook for 4-5 minutes, or until lightly browned.
Serve on buns with your choice of toppings.
